About
Our Restaurant
TSUBOMI, meaning "bud" in Japanese is the first "seafood and sushi bistro" in New York, a playful, imaginative new take on serving Japanese cuisine. We hope to create a fun, casual atmosphere were customers can enjoy a date, a night our with friends, or a family dinner at one of our tables or our traditional sushi counter.

Our Chef Owner
Born and raised in Yokohama, chef owner Genta spent over a decade in Japan mastering traditional kaiseki cuisine and becoming a licensed saké sommelier before moving on to intensive training in Edomae-style sushi making at the iconic Ginza Kyubey. Most recently working under Iron Chef Morimoto in New York, he finally achieved his dream of opening his own restaurant: TSUBOMI.
